Chocolate Sandwich Cake Recipe

This simple chocolate sandwich cake has so few ingredients it is almost unbelievable. But it is based on a very old recipe first published by the Cadbury Brothers - George and Richard Cadbury, who took over the Cadbury's cocoa and chocolate company from their father in 1861 - in the early part of the 20th century.

You can use any filling and any icing for this cake, but these recipes are also courtesy of the Cadbury Brothers. If you use them, do be sure to use Cadbury chocolate and not another brand! Or if you use another brand, don't tell...

Chocolate Sandwich Cake Ingredients

125 g cake flour
125 g sugar
3 large eggs

For the chocolate butter filling

185 g icing sugar
90 g butter
60 g cocoa
vanilla essence
white of one egg

For the chocolate icing

60 g Cadbury Bournville chocolate
125 g icing sugar
5 tablespoons milk and water look at, Collage Creator mixed

Method

You will need 180 ml (approximately) sandwich tins which you should line with greaseproof or waxed paper. You also need to preheat your oven to 185 °C.

To make the batter, start by breaking the eggs into a mixing bowl with the sugar. Whisk well for about 10 minutes until you have produced a light, why not visit, RC Flying fluffy mixture. Then whisk in the flour - which you should first sieve. Try to whisk as lightly as possible, and when it is all blended well together, pour the mixture into the tin. Bake for about 25 minutes and then turn out onto a wire tray.

While the cake is baking, make the butter cream filling.

To make the chocolate icing, chop the chocolate coarsely using a sharp knife. Continue beating until it is lovely and smooth.

When the cake is cool, spread the filling between the loaves and ice the top of your chocolate sandwich cake.
