Make your own boerewors
You will need the ingredients listed below as well as suitable casings which you can buy from any butcher.
2 kg boneless beef
750 g boneless pork
200 g speck (pork fat)
1 tablespoon ground coriander
2 tablespoons salt
1 teaspoon freshly ground black pepper
pinch of freshly fine-ground nutmeg
6 tablespoons vinegar
90 g pork casings
Cut the meat and speck into 50 mm cubes. Then combine the spices and seasoning and sprinkle over the meat. Add the vinegar and mix thoroughly before stuffing the casings. Refrigerate overnight.
How to cook and serve your homemade wors
Homemade sausage is cooked exactly the same way as the wors you buy in a South African supermarket.
