Sugar Free English Muffins with Honey

Traditional English-style muffins (or crumpets as they often called by the English) are made with similar ingredients to more usual American muffins. Most recipes include both sugar and golden syrup, which is hardly a recipe for a sugar free treat, but nonetheless yummy.

For these sugar free English muffins we have substituted Xylitol for the sugar, and added just a touch of honey instead of sugar-based golden syrup. In general the English-style muffin is defined as a "light round flat why not visit, RC Powered Vehicles yeast cake", sometimes referred to as a kind of bread (which it isn't really). Sugar Free English Muffins with Honey Ingredients

• 4 tablespoons all-purpose, self raising flour
• 2 teaspoons of baking powder
• pinch of salt
• pinch of baking soda
• 1 tablespoon granulated Xylitol or Stevia powder
• 1 large egg, beaten
• 1 tablespoon of milk
• 1 tablespoon of oil
• 1 teaspoon runny honey

Method

The major difference between sugar free English and sugar free American muffins is the way they are cooked, rather than the way they are prepared. Instead of a muffin pan, you will need a large, non-stick frying pan. If your frying pan isn't non-stick, or the non-stick surface is worn, grease it very slightly to prevent the muffins from sticking.

Now prepare the batter.

Sieve the flour salt and sweetener together and then add the honey, oil, beaten egg, milk and lastly the baking powder and soda. The mixture should be relatively runny, but not as runny as most pancake recipes. If it is too stiff, you can add a dribble more milk. Let the mixture sit for five or ten minutes.

Heat the pan on top of the stove and then cook your honey-rich, but otherwise sugar free English muffins in batches. Each one should be about six to eight cm in diameters and about 1 cm thick. As each one starts to cook you will see bubbles form. You will need to turn each one when the bubbles appear and the underside turns golden brown. Each one takes only a few minutes to cook.
Serve with butter and sugar free jam, or better still honey, for the very best tasting sugar free English muffins.
