Sugar Free Sour Milk Banana Muffins

Sugar free sour milk banana muffins are a great alternative to banana cakes or heavy banana bread.

Use your favourite sweetener to make these muffins. If you choose Equal, you will need eight packets or sachets. Remember that one sachet of this type of artificial sweetener contains 5 ml, and it equals one teaspoon of sugar in terms of sweetness. If you substitute a different sweetener, make sure one teaspoonful also equals a teaspoon of sugar. If it doesn't then you will need to adjust the quantities.

Even though there is baking powder in this recipe, you are advised to use self-raising flour to ensure that the muffins are nice and fluffy rather than heavy, like typical banana bread. Beating the eggs, milk, butter and banana also helps to aerate the batter mix.

You will have enough batter to make between 16 and 20 muffins, depending on the size of your muffin pans.

Sugar Free Sour Milk Banana Muffins Ingredients

• 2 cups self-raising flour
• 2 teaspoons baking powder
• ½ teaspoon bicarbonate of soda
• ½ teaspoon salt
• 5 tablespoons Xylitol or other sweetener
• 2 large eggs
• 4 tablespoons sour milk
• 4 tablespoons melted butter
• 2 cups mashed banana

Method

You will cook these sugar free muffins in a moderate oven, at 180 °C. So put your oven on before you start mixing.

Start by sifting all the dry ingredients together, into a large mixing bowl. Then beat the eggs, butter, milk and banana with a hand whisk or electric also look at, RC Nitro Jet Skis mixer. Add this mixture to the dry ingredients and stir until there is no trace of flour. The mixture will be lumpy, don't worry about this and DON'T over-mix.

Grease your muffin pan or pans with a little butter and then spoon the mixture into the pans. They should be about 2/3 full. Bake for up to 35 minutes, but check them after about 25 minutes by sticking a toothpick into one of the muffins. Some ovens do tend to cook more quickly than others.
