Baked Country try, Kids Toy Robot Cheesecake

This is a baked cheesecake that has a pastry case and is filled with a very basic cheesy filling. It's pretty simply, and you can make it using a frozen shortcrust pastry (that has been thawed, but is still firm) bought from your local , RC Scale WWI supermarket. You can use shortening, specifically butter or hard (brick) margarine, or lard and hard white try, Xmods RC Cars vegetable fat to make your own pastry. Country Cheesecake Ingredients

550 g cottage cheese
150 g castor sugar
50 g plain flour
3 large eggs
25 g butter, melted
Rind of 1 lemon, grated
1 teaspoon icing sugar

For homemade shortcrust pastry

225 g plain flour
100 g butter or lard
Pinch of salt

Method

Roll out the pastry on a floured surface, and then line a square, shallow cake tin with the pastry.

Sieve the cottage cheese so that it is nice and smooth. In a large mixing bowl, cream together the sieved cottage cheese and the sugar. Sieve the flour into the bowl. Beat the eggs and add these to the cheese, sugar and flour, together with the lemon rind.

Mix all the ingredients together well and then spoon into the pastry case. Bake for about an hour until the cheese filling is nice and firm.
