Anybody who knows anything about cheesecake knows that there are two basic sorts. The one is baked and the other one is chilled, like a kind of fridge cake, without any cooking at all. Arguments abound in terms of which is right and which is best. Some people eating out in restaurants will even demand to know which type will be served before they will order any type of cheesecake.

There is little doubt that the traditional cheesecake was cooked. It was - and still is - baked on either pastry or a biscuit crumb base, with a fairly solid topping that was made with some sort of sweetened cream cheese. Unlike traditional cakes, this type of cake can sink in the middle without it altering the flavour. Uncooked cheesecake is normally made with a biscuit crumb base that has been mixed with some sort of fat and sweetening.
