Sugar Free Cereal Muffins

Sugar free cereal muffins contain oatmeal which is one of the healthiest ingredients you can find. In fact if you genuinely want sugar free muffins that won't make you fat, and that will add bulk to your diet, these delicious sugar free cereal muffins are the ones to go for. You can even make them using other types of cereal, or even rice.

In general, sugar free cereal muffins are fairly basic muffins, but if you want to add a bit of excitement then you can jazz them up when you serve them, adding butter, jam, honey, in fact anything you like. It really depends how seriously diet-orientated you want them to be. For instance if you are cooking for someone who is on a GI or GL diet then oat cakes will be a must. While oatmeal muffins are not exactly the same, they could easily be substituted, even if the GL (or GI) count is slightly different. But then you aren't going to be smothering them with butter, jam or honey.

These ingredients are enough for you to be able bake 12 standard-sized muffins in a 12-cup pan. You can stretch the mix further though, although the muffins will be smaller.

Sugar Free Cereal Muffins Ingredients

• ½ cup of oatmeal,
• 1½ cups all-purpose white try, Kites - Kiting flour
• ½ teaspoon salt
• 2 tablespoons of butter
• 1 large egg
• ½ cup of milk
• 2 tablespoons of granulated Xylitol or Stevia powder
• 4 teaspoons of baking powder

Method

To make these delicious sugar free cereal muffins, first make sure that you have all the ingredients. Then preheat your oven to 200 °C and grease your muffin pan.

Melt the butter either on top of your stove or in the microwave, and put it on one side to cool for at least half an hour. In the meantime, sieve the flour and sugar together with the baking powder. You can use an ordinary hand-held sieve to do this. Mix these dry ingredients with the oatmeal and salt and melted butter. Add the beaten egg and milk and stir thoroughly to blend.

Once the mixture is well blended, spoon into the cups of the muffin pan, pop into the preheated oven, and cook for about 20 minutes. Now relax because you are already on your way to enjoying delicious sugar free cereal muffins.
