Sugar Free Parsnip Muffins

• 1 tablespoon vanilla essence or extract
• 1 cup finely chopped walnuts or pecan nuts
Method
Preheat your oven to 190 °C and grease a 12-cup muffin pan with a little butter or use a non-stick spray.
Sift the two types of flour together into a large mixing bowl with the baking powder, baking soda and salt. Stir in the grated parsnips and the currants. Add this mixture to the dry ingredients and stir until the flour is moist with no evidence of dryness.
