South African game recipe for Venison patties

There is nothing quite like homemade burger patties. In fact once you've made your own you're unlikely to ever buy frozen patties off the shelf again. This South African game recipe takes the idea a step further, using venison instead of ham or beef for the patties. The idea is more or less the same, and you will need to mince the venison - or get a butcher to do it for you. You can use any cut of venison meat that would be suitable for a beef recipe. But you will find that buck (or deer) meat - which is the recommended type of game to use for this South African game recipe - is considerably sweeter than regular beef meat. These patties can be served on buttered buns or round rolls, or on mashed potato, topped with onion gravy. The South African game recipe should be sufficient for you to make as many as 36 small patties or about 16 large ones suitable for burgers.

Ingredients
750 g shoulder of venison
375 ml stale bread, crumbled into crumbs
125 ml celery, finely chopped
85 ml butter or margarine
1 egg, slightly beaten
125 ml water
8 ml salt
pepper
2.5 ml poultry seasoning

ONION GRAVY
22 ml flour
30 ml butter
250 ml water
2.5 ml salt
250 ml onion, thinly sliced
250 ml lettuce, finely shredded

Method
Cut the meat off the bone and remove all fat. If there is marrow in the bones, keep it on one side. Mince twice and put into a bowl. Sauté the celery in about two tablespoons (30 ml) butter for about 10 minutes. Add to the meat with the breadcrumbs, any marrow you rescued and the remaining ingredients. Mix well and then shape into small patties about 25 ml in diameter (if you are serving with mash) or burger size if serving in the form of venison burgers.
